CHANTERELLES
Probably the most famous wild mushroom. They are both firm and mellow, with a slightly peppery after taste and a lovely fruity aroma (some say peach or apricot aroma). This mushroom keeps well. |

DELICIOUS LACTARIUS
These fragile mushrooms have a unique crunchy texture with a distinctive spicy taste and an aroma close to that of marjoram. The orange milk they exude adds a flash of colour to sauces. They are excellent in soups or grilled with olive oil and herbs.

HEDGEHOG MUSHROOMS
Dense and firm texture with a slightly bitter taste. A pleasant and perceptible fruity smell. A gourmet mushroom, much sought after by Chefs.

Fruits in clusters on wood or stumps. Slightly bitter distinctive flavour, firm flesh, sweet odor. This mushroom is recommended for cream sauce dishes or marinades. Must be well cooked. |
